The Bisol winery took root in 1875 in the heart of Valdobbiadene, an area that was already at that time the pulsating heart of an activity, characterised by a tendency towards innovation, that still makes it unmistakable today. A true cave of wonders that was excavated into the precious rock and earth of the Prosecco land and maintains a constant temperature range of 10° to 15°C throughout the year,  perfectly conserving some of the Bisol vintages, the most prestigious bottles produced over the centuries.

These bottles can still be admired on location covered with the patina of time and laid out in this “sancta sanctorum” of living rock, manifesting the excellency of the Bisol trademark generation after generation. The family winery has been maintained intact in every detail for many years and the current members of the Bisol family, who are looking after it with particular care, can often be seen moving around within these antique walls in search of inspiration. 

Maybe its for this reason that the Bisol Winery is able to evoke such intense sensations and a sense of involvement in the visitors, filling them with the desire to return again and again, once more to savour the charm and fascination of its history.

Sensory features: Pale yellow, with a fine and persistent perlage. The nose has fragrant aromas of white pulp fruit, violets and acacia. On the palate it is fresh, soft, full and creamy, with a rich and particularly tasty finish.

The Jeio line is inspired by the influential Desiderio Bisol, whose wife lovingly referred to him as Jeio. The father of the current owners, Desiderio is dedicated to product quality, acquiring only the steepest plots. While considerably more difficult to work, these plot were ideal for vine cultivation. The varietals for this limited production cuvée are selected from Bisol vineyards with a strong silt presence and low yields, resulting in a final wine with expressive, layered aromatics and intense flavour. 

This sparkling wine is exposed to the south, having a strong presence of silt which, together with a limited yield per hectare, allows for the production of a full bodied wine with intense flavour and aromatic qualities.

Sensorial features: Sparklingly clear gold-yellow colour. Elegant, complex with notes of peach and apricot and delicate hints of fresh, white flowers. Fine and persistent perlage. Full, flavoursome, harmonic persistent with a balanced softness.

Serve in flute glasses at 6-8°C, uncorking the bottle immediately before consumption.

The Jeio line is inspired by the influential Desiderio Bisol, whose wife lovingly referred to him as Jeio. The father of the current owners, Desiderio is dedicated to product quality, acquiring only the steepest plots. While considerably more difficult to work, these plots are ideal for vine cultivation. As a result of his vision, the Glera cultivated in these vineyards is especially rich in malic acid, making the final wine more dynamic and evolved. Only the best Glera grapes are selected from Bisol’s 35 plots in Valdobbiadene to make the highly aromatic Jeio Brut.

Sensorial features: Brilliant, bright straw yellow with a fine and lively perlage. Elegant and pleasant with an enjoyable fruitiness and nuances of ripe yellow fruit. Mellow, elegant flavored and true to the bouquet provided by its marked fruitiness.

Serve at a temperature of 8 C (46 F) in a flute. It is ideal as an aperitif; very pleasant and easily digestible and goes well with meals.

Crede Cru Prosecco di Conegliano Valdobbiadene Brut Price € 18.50

Sensorial features: Brilliant straw yellow Light and floral on the nose, with notes of white peach and spring flowers, all presented in a very open and fresh, per fumed, accessible fashion. There is also a drier note of chalk underpinning it. The palate has a steely start but quickly reveals a softer sweetness in the middle, with a soft and slightly foamy mousse and chalky, floral flavours. Serve with risotto, pasta with vegetables, light fried fish. Great with sushi, sushimi, tempura and Tofu. It is also the ideal Prosecco for preparing the original Bellini.

A refined Prosecco Superiore that comes from the largest vineyard owned by Bisol1542: 8 hectares of vines in the hamlet of Campea, expertly nurtured by hand, which benefit from perfect exposure to sunlight and an excellent microclimate.

The result is a Prosecco Superiore that succeeds in expressing the full potential of this hilly, winemaking region.

Sensory features: Straw yellow in colour with nuances of green rendered brilliant by the minute, rich and persistent perlage. The bouquet is delicate and lively with scents of wildflowers and fruit fused in a complex harmony of rare finesse. On the palate it is soft, balanced, sapid, pleasantly acidity and fruity.

In view of its fresh character, it is ideal as an aperitif, appetizers steamed fish, grilled fish, spaghetti with clams, mixed fried fish, appetizers smoked fish, fish stew and tartare-fish carpaccio
