The great virtue of this Verment ino is that it enhances the aromas and flavours peculiar to Bolgheri. Its clean, crisp flavour and purity are its dist inguishing features. The grapes are harvested when their colour changes to an intense yellow. The name Solosole, meaning ‘just sunshine’, derives from the fact that the wine essentially a direct result of the work under taken in the vineyards and the ripening sun.

Sensory features: Brightst raw yellow in colour , with a substantial consistency. Solosole is characterised by a vibrant freshness, which is delicate and balanced. The palate is intense, persistent , and refined. The aromas are both floral (white flowers and acacia) and fruity (yellow and tropical, including apricot and banana), typical of this variety.

An ideal wine to accompany all aperitifs, raw fish, and - due to its tanginess and fragrance - fried and poached fish. Its crispness also makes it suitable with vegetarian cuisine. Serve at 8-10° C, uncorking the bottle immediately before consumption.

Sensory features: This radiant straw yellow wine impresses with intense aromas of Mediterranean herbs, meadow flowers and citrus notes. On the palate, it is full-bodied with refreshing acidity, a satisfying savouriness and minerality on the finish.

Technical notes

Grape variety: 100% Vermentino

Vineyards: Grapes for the Pagus Camilla Vermentino are grown in proximity of the river Camilla within 'Le Sondraie' vineyard which covers seven hectares at an altitude of 25 metres above sea level. This part of vineyard faces west, and its deep sandy soil is rich in iron and has gravel and clay layers. Vines are eleven years old and are trained with the Guyot system at 7,936 plants per hectare.

Vinifivcation: The grapes were hand harvested in September and sorted on arrival at the winery. The whole bunches were cooled before being gently pressed, the start of fermentation characterised by maceration on skins, before the must was separated and fermented in temperature-controlled stainless steel tanks at 14°C for 25 days. The wine remained in tank on fine lees with regular bâtonnage for nine months until bottling in June, and was then stored in bottle for a few months prior to release.

Best served: Pagus Camilla is the ideal accompaniment to both sea and lake fish, and is excellent with prestigious raw fish dishes, Livorno-style mullet, Lake Garda sardines and various refined tempura specialities. It pairs perfectly at the end of a meal with Doppia Panna soft cheeses and Tuscan Pecorino. Serve at 8-10°C and uncork just before drinking.

Cassiopea Bolgheri DOC Price € 19.20

Cassiopea is named after a constellation, which, depending on its orientation in the sky, can resemble either an 'M' for Marilisa Allegrini or a 'W' for her late brother Walter, with whom she embarked on the Poggio al Tesoro project before his passing. Made from a blend of Merlot and Cabernet Franc , the final rosé shows both complexity of character and easy-drinking enjoyment.

Sensory features: Deep strawberry-pink in colour, Cassiopea exudes playful aromas of ripe strawberries, red cherries, and orange zest. On the palate, it is medium-bodied and crisp, with a supple mouthfeel and a long, flavourful finish.

Best served: Perfect as an aperitif, Cassiopea also pairs with tuna, rustic seafood stews, bruschetta and other tomato-based appetizers, and grilled chicken or pork .

Technical notes: 70% Merlot and 30% Cabernet Franc

Mediterra fully reflects the characteristics of Bolgheri, displaying an extraordinary harmony between the freshness of its aromas and its warm, powerful flavours. The spicy note lent by the Syrah varietal makes the wine intensely enjoyable as well as easy to drink.

Sensory features: Tremendous depth of black-red colour with a youthful purple rim. On the nose it is spicy and intense, with notes of aromatic Mediterranean herbs from the Syrah adding depth to the spicy, red and black fruit characters of the Cabernet and Merlot. On the palate, the three varieties work together to produce a full-bodied, well-structured wine with plenty of fruit and lovely silky tannins. Juicy blackberry and oregano perfumes come through on the finish.

Best served: An ideal pairing with various meat dishes, cold cuts and medium-matured cheeses, including Italian Pecorino. It should be enjoyed slightly chilled, with seafood dishes such as mullet in tomato sauce, poached fish and Livorno-style salt cod.

Serve in large glasses at 14-16˚C, uncorking the bottle an hour before consumption.

This wine offers a specific and unique mouthful that is full and dense but also creamy and luscious. It makes a particularly glossy or shiny impact in terms of mouthfeel.

Vineyards‘Seggio’ is the name of the creek that runs through Bolgheri - its course from above is represented on the label. This wine is produced from different plots of vineyards in the Poggio al Tesoro estate. The Cabernet Sauvignon is grown in the Via Bolgherese vineyards, at 56 metres above sea level. Here soils are deep, with coarse-grained red sand, that is gravelly and well-drained with a layer of clay four feet below the surface. The other varieties are grown in the Le Sondraie vineyard 35 metres above sea level where the soils are clayey with well-drained sandy silt and high concentrations of magnesium and iron.

VinificationThe grapes were destemmed and softly pressed. Fermentation took place in temperature-controlled stainless steel tanks at 28-30°C for 12 days. Malolactic fermentation was carried out naturally in barriques in November. The wine was then aged for 15 months in 225 litre French oak barriques from Allier (30% new, 70% second use).

Best servedIt pairs effortlessly with a wide range of dishes such as grilled meats - especially Chianina beef - spit-roasts, ossobuco, charcuterie of wild boar, medium-matured and fully-matured pecorino cheese, and smoked ricotta. It is enhanced with pasta prepared with white meat ragout, pappardelle with hare. Serve at 16-18°C and uncork an hour before drinking.

Sensory features: Intense ruby red in colour, with aromas of ripe red berries blended with balsamic spice and elegant toasty notes. Exotic spicy notes with scents of ripe, red fruit follow through to the full-bodied and well-balanced palate, with ripe, fine-grained tannins.

One of the best from the Bolgheri

The vines for the excellent Bolgheri Blend Sondraia grow right next to the Ornellaia vineyards. The Poggio al Tesoro winery is owned by the Allegrini family, who pioneered in Veneto and are now also very successful in Tuscany. Marilisa Allegrini shapes the style and manages the Bolgheri jewel with great care and enthusiasm. The Sondraia with the newly designed label was awarded 95 points by Wine Spectator. This high rating is also confirmed by the 3 bicchieri from Gambero Rosso.

Sensory features: Deep ruby red to the edge, almost black in the middle. An aristocratic bouquet with notes of black berries, also some Mediterranean spice as well as notes of dark chocolate and cold smoke, finally a subtle bacon note. On the palate equally elegant and very powerful, aromas of blackberries and blackcurrants are noticeable, also bread crust tones and walnut; the toasting notes are discreetly and suitably integrated, very fine tannins; long-lasting finish, which shows a splendid storage potential.

Grape varieties: 65% Cabernet Sauvignon, 25% Merlot and 10% Cabernet Franc

Ageing: 18 months in 225 litres barrels

Serving temperature: 16-18°C. Open one hour before, taste and then decide whether to decant the wine or not.

Best served: We recommend this wine with braised meat, lamb gigotto or tagliata. Also excellent with venison stew, roast beef with mushrooms and ripe pecorino.
