Grape variety: Pecorino
Production Area: Hinterland of the municipality of Ortona and neighboring municipalities. The vineyards are exposed to the South-East so that they can enjoy the best hours of light.
Vinification: Crushing-destemming, contact with the must skins for approximately 12 hours at an average temperature of 3° C, soft pressing, static clarification of the must obtained. Subsequent fermentation at a temperature of 12°C. 20% of the masses make a quick passage into barrique.
Wine idea: recommended for lovers of fresh and dry wines, with a strong and intense character, characterized by a good dose of acidity and a pleasant fruity note.
Food pairings: Due to its balanced and fresh taste, Pecorino is a very versatile wine when it comes to table pairings. It can be served as an aperitif, combining it with a starter of medium-aged cheeses. It is suitable for pleasantly combining fish dishes, even the most elaborate ones but also dishes with strong flavours, based on molluscs and crustaceans. Being a well-structured wine, it should also be tried with white meats.
