Grape Varieties: 80% Merlot, 19% Cabernet Franc & 1% Cabernet Sauvignon
Vineyard: A benchmark among the great wines of Saint-Émilion, Château Pavie Macquin oversees a vineyard of 14.5 hectares, including 12.88 hectares in production. The vines, which are on average 35 years old, are planted on a clay-limestone terroir on the asteriated limestone plateau of the appellation.
Winemaking & Ageing: Whole grapes are vatted by gravity, then vinified by plot in concrete vats. Aged on fine lees for 16 to 20 months in barrels (50% new and 50% one-wine barrels) with a first racking after 6 to 10 months of ageing, then a second one a year later, before bottling.
