Sensory Features: Pinot Grigio provides complex fruit and herbal aromas, hints of oak, vanilla and nutmeg. It has fruity flavours of peach, grapefruit, lemon-lime and minerals and is medium-bodied with roundness and a pleasant mouth feel. The finish is long, clean and spicy yet delicate.
Vinification: Crushing, de-stemming, soft pressing and static decantation.
Maturation: The clear must is then fermented at a temperature between 12-14°C. At the end of the fermentation, the lees are then left to rest for about 3-5 months and then the wine is bottled.
Best Served: Easy to drink well with rich pasta dishes, white meat and cheese. Delicious with cream soups and grilled fish.
